That’s a staggering figure when you consider how little of that process feels deliberate. You didn’t choose to trust the red packaging. Your brain just did.
Colors affect not only perception but also psychological and emotional responses. Psychological theories suggest that color reliably evokes emotions and can distinguish between them. This relationship is particularly evident in food-related contexts, where color and emotion shape consumption behavior, mood, and the affective responses elicited by food.
Spence (2024) defines color as the most important product-intrinsic sensory cue with reference to taste expectations, both for food and drink. That’s not a marketing observation. It comes from sensory science, and it confirms what brands have been quietly exploiting for years.
Warm Colors Sell Indulgence, Cool Colors Sell Health

Warm-colored packaging suits vice foods, while cool-colored packaging aligns better with virtue foods. This is not coincidence. It’s a calculated formula, backed by consumer behavior research and applied with precision across product lines worldwide.
Research suggests warm colors might be closely linked to a product’s sweetness, deliciousness, or emotional appeal, while cool colors are associated with a product’s freshness or health attributes. Walk through any supermarket and you’ll see this play out almost without exception. Candy aisles burst in red, orange, and yellow. Organic product shelves lean heavily into muted greens and earthy tones.
Products marketed as healthy or diet-friendly often use muted, earthy tones like beige, green, and light blue, which consumers associate with simplicity and naturalness. The product inside may not be any healthier. The packaging is doing the convincing.
Red Is the Most Potent Weapon in the Color Arsenal

Red stimulates appetite and urgency. This is why so many fast food chains, snack brands, and beverage companies anchor their visual identity in red. It’s not brand tradition. It’s neuroscience wearing a logo.
In a consumer study with 295 participants, the red sample achieved the highest acceptance score, and was strongly associated with positive emotional terms such as pleasant and satisfied. That study, published in the journal Foods in 2025, measured emotional responses to different colors in food contexts. Red won, consistently.
Research findings show that red packaging increases calorie estimations, while green packaging enhances health perceptions. In other words, the same food in different colored packaging generates genuinely different physiological expectations in the consumer’s mind.
The 90-Second Sale: How Packaging Color Converts Shoppers

In a current fast-paced environment, consumers have an average of only 2.5 seconds to select a product from a wide range of options on the shelf, and this time constraint prevents consumers from processing detailed product information – they often rely on visual cues for product evaluation, especially color.
Packaging color entices and influences consumer perceptions and significantly affects the identification of products. Marketers manipulate the exterior packaging to influence consumer expectations, experiences, and behaviors. The 2024 study published in Frontiers in Nutrition mapped this process in detail, showing how color consistency between packaging and food type significantly enhanced purchasing behavior.
A study of emotion-based color palettes in marketing, presented at the 2024 Joint International Conference on Soft Computing and Intelligent Systems, analyzed branding across 644 food companies. Its conclusion: emotional color resonance, where hues match the sentiment of the brand, directly boosts consumer favorability.
How Much Is This Industry Worth?

The global food colors market size was valued at USD 3.78 billion in 2024 and is estimated to reach from USD 4.23 billion in 2025 to USD 10.40 billion by 2033, growing at a compound annual growth rate of 11.9 percent during the forecast period. That’s not a niche additive category. It’s a major global industry built almost entirely on the premise that humans eat with their eyes first.
The beverage sector alone leads synthetic dye consumption, accounting for roughly a quarter of global industry usage. From sports drinks to fruit juices, much of what looks vibrantly colorful in a bottle owes its appearance to petroleum-derived chemistry, not fruit.
More than 36,000 American food products contain Red 40, and over 8,000 products contain Red 3. These numbers make the scale of artificial coloring in the everyday food supply very concrete.
Children Are the Primary Target

Artificially colored foods are often marketed to children, who, without being aware of their nutritional needs, may be fascinated and attracted by colors. Because of their lower body weight, children are more likely at risk when consuming products such as candies and beverages containing artificial dyes, which may induce allergic reactions ranging from urticaria and angioedema to anaphylaxis.
A 2024 review study in the International Journal of Environmental Research and Public Health addressed the harmful effects of artificial colors in pediatric populations, including children diagnosed with Autism Spectrum Disorder and ADHD, as well as those without behavioral disorders. There is a consensus that synthetic food colorings have several impacts on consumers, especially children, due to their influence on sensory appeal, which can encourage preference for certain foods.
The artificial colors used for these purposes are designed for the unique purpose of boosting sales, and they are devoid of any nutritional benefit. The appeal they generate is entirely cosmetic. Yet it shapes lifelong dietary preferences in the youngest and most vulnerable consumers.
The Health Concerns Are Real, Even If Contested

Synthetic food dyes remain prevalent in children’s diets despite growing evidence linking them to adverse neurodevelopmental outcomes, including exacerbation of ADHD symptoms. A systematic review of 27 clinical trials, conducted by the California Office of Environmental Health Hazard Assessment, reported an association of 64 percent between synthetic dye exposure and behavioral changes, with more than half of those associations being statistically significant.
A review published in Chemosphere in 2024 highlighted that dyes such as Tartrazine and Allura Red increase oxidative stress by increasing the generation of Reactive Oxygen Species, damaging neuronal cells. The picture isn’t fully settled scientifically, but the direction of evidence is increasingly hard to dismiss.
Since 2010, European regulations have required warning labels on foods containing certain synthetic dyes, stating they “may have an adverse effect on activity and attention in children.” That label requirement reflects a regulatory philosophy quite different from the U.S. approach, where these same dyes remained in widespread use until very recently.
Regulators Are Finally Catching Up

On April 22, 2025, the U.S. Food and Drug Administration and the U.S. Department of Health and Human Services announced a plan to phase out petroleum-based synthetic dyes from the U.S. food supply by the end of 2026, citing health risks associated with these dyes. It marked a significant shift after decades of regulatory inaction on this issue.
About 72 percent of U.S. adults say they are at least somewhat concerned about the use of synthetic dyes in food, according to a March 2026 nationally representative survey from Consumer Reports, and 66 percent say food and drug companies should be required to phase them out.
In 2025, Tyson Foods removed synthetic color additives from its products, and PepsiCo released new Doritos and Cheetos products made with no artificial flavors or dyes, though the original dyed options continue to be sold. The industry response has been real, though uneven, and far from uniform.
The Race Toward Natural Alternatives

The FDA approved four new natural colors to ease the transition toward clean label additives: galdieria extract blue derived from algae, butterfly pea flower extract, calcium phosphate as a white pigment, and Gardenia blue derived from fruit. These approvals represent a meaningful expansion of options for reformulating brands.
Colors extracted from sources such as beetroot, turmeric, paprika, spirulina, and berries are increasingly used as alternatives to synthetic dyes. Yet the transition is not without challenges. Natural pigments are generally more expensive, less stable under heat, and harder to keep consistent across large production batches.
Campbell’s has pledged to no longer produce any food or beverages with synthetic colors by the second half of the 2026 fiscal year, while General Mills is eliminating certified color additives from all U.S. cereals by mid-2026, and Kraft Heinz will remove all traces of synthetic dye colors from its U.S. portfolio by the end of 2027. The momentum is building, though the timelines vary widely by company.
Can Consumers Really Protect Themselves?

Public health campaigns have potential to educate consumers about the psychological influence of packaging color on food perception. If individuals become more aware of how color biases their judgment, they may make more rational food choices based on actual nutritional information rather than heuristic cues. That awareness is easier said than achieved, given how automatic the color-to-emotion pathway is.
Research shows people tend to give more weight to negative information than positive, even when both are equally intense. This means that a red warning label on unhealthy food may register more powerfully than green reassurance labels on healthier options. Color-coded nutrition labeling is becoming more common across global markets precisely because of this asymmetry.
Some consumer groups have raised concerns that products labeled with “no artificial colors” might still include added natural colorants that change the product’s appearance, which creates a new layer of complexity for shoppers trying to navigate a cleaner diet. The label changed. The psychological manipulation, in its subtler form, remains.
The game of color in food has always been about trust, specifically about borrowing trust visually that hasn’t been earned nutritionally. The regulatory shift now underway is meaningful, but the deeper mechanism – color as a shortcut to your appetite – won’t disappear with dye phase-outs. Understanding why your brain reaches for the brighter package is, in the end, the most useful tool any consumer can carry into a grocery store.
